Easy strawberry breakfast muffin


Third time lucky with these tasty treats.
I'm really happy with the way they have evolved.
From an initial idea that tasted good but looked awful.
Then an improvement but not quite enough mix.
To a perfect way to start the day.
The idea was born because I wanted another way of using the oddments of mis-shapen, beginning to rot, over ripe strawberries that we had too many of.
Also I like to vary my breakfasts.
We don't eat the same thing for dinner everyday.
So why start the day the same way.
One of these alongside a bowl of yoghurt, nuts and honey 
and I have all the food groups covered (more or less).
They contain wholegrain goodness, no sugar (only honey) and very little fat.
They freeze very well.
A few minutes in the microwave or a low oven while you're in the shower.

They are a very easy bake that takes little time to prep and cook
and are delicious at any time of day.


Strawberry breakfast muffin

  • Pre-heat the oven 160 centigrade fan assisted
  • Line a twelve hole muffin tin with paper cases
200g plain white flour
100g wholemeal flour (I use bread flour)
half tsp bicarbonate of soda
2 tsp of baking powder
2 tsp ground cinnamon
pinch salt

250g strawberries chopped into roughly 1-2cm pieces
plus optional extra for the tops

1 medium ripe banana, mashed
2 large eggs, beaten
50g of cooled melted butter or oil
100g runny honey
125g milk
  • Sieve the dry ingredients together in a large bowl and stir until well combined and all those lumps of soda are broken down
  • stir in the strawberries until well coated in flour
  •  To save time and washing up, mash the banana in a jug, whisk in the eggs, add the butter/oil, honey and milk and whisk to combine
  • Pour over the dry fruit mix
  • Fold together gently. Don't over mix your muffin batter
  • Spoon into the paper cases
  • Pop the extra chopped strawberries on top if using
  • Bake 25 mins, turn after 20
Eat warm from the oven.
These will not keep fresh for long.
So eat on the day they are made, reheat the next day,
or freeze when cold.

I can't wait to try a different berry version of these.
The obvious choice is blueberry.
